My grandfather was Romanian and made sure we all had a copy of the book this recipe is based on, The Cuisine of Hungary. Hungarian Goulash is a European version of a beef stew. This recipe consists of tender beef, peppers, potatoes, tomato, onion, and garlic cooked down in a paprika broth thickened with a little sour cream. It's served on egg noodles and topped with sour cream, fresh dill, and a splash of red wine vinegar. This Hungarian goulash is tasty, satisfying, and definitely a great recipe for those cool fall days.
