Thai Peanut Roasted Veggie Chickpea Wrap
These vegan roasted veggie chickpea wraps are made roasted cauliflower, broccoli, sweet potato, onion and chickpeas topped with a homemade thai peanut sauce, peanuts, cilantro and wrapped in a large flour tortilla. The absolute best part is you can freeze these wraps and reheat in the microwave for 2-2.5 minutes for a piping hot delicious wrap on the go! These are healthy and absolutely delicious. TMK tip: remove wrap from tin foil, wrap tortilla in a wet paper towel and reheat in the microwave for 2-2.5 minutes or thaw in the fridge overnight for lunch or dinner the next day.
